The two sides of my favorite tower in my hometown Bordeaux. Bordeaux is known for wine but it should be as famous in my opinion, for one of the best pastries in the world, the canelés, created in Bordeaux by nuns in the 17th century. I love them and love to make them, you can see how they look like in the last picture of this post of a batch I made. Trust me they taste even better than they look! We make them only on catering events and my visit to Bordeaux is an opportunity to learn more about the subtle taste of this delicacy and share it with our dear clients and friends in Georgia. Among my best friends and most brilliant people I've met. We used to meet every Sunday morning around 7:30am in a one of the special places in Paris. Why so early on Sunday? Because at 7 am on Sunday, Paris belongs to you, you have the city for yourself 😍. We always choose a subject of conversation that was about, philosophy, mathematic, art, science, spirituality or history. That was incredibly stimulating and I never missed a day. The idea of Holy Crepe and what I wanted it to be are born during those Sunday mornings. The invisible part of the iceberg, the foundations were born then and there. I thank gratetully my dear friends for being such an inspiration and support 😊❤️

One of the best crepes (galettes, the traditional savory crepe in this case) in the world you can find it in Montmartre. Way before my crepe life chapter, it was one of my favorite places to go in my neighborhood. Always with a cidre (not the american version "cider", real Cidre!! haha). Check out Breitzh cafe if you visit 😉 And the best among the best crêpes in the entire planet will always be in Bretagne region, so go to visit to!! (This is where I went to a crepe school to learn their centuries art of galettes and crepes 😋)

On top of sharing an amazing haircut, we share our love of meeting people, bringing them together, loving them like they are family, because in the bigger scale of life, they are! He taught me to smile and laugh with people. Without his lessons, Holy Crepe would be just another business. Cheers to the people who inspire us 💓🇺🇸💓🇫🇷

Bordeaux is not famous only for wine, it is as well for one of the best and most beautiful French pastries, le Canelé de Bordeaux!Caramelized outside, tender like a flan inside, created by nuns in the 17th century this is a very special treat that took me time to master, for very special occasions. Being born in Bordeaux, there are very special to my heart.
